One of the best things about Italy: you can always find good, fresh and relatively cheap mussels here. Local white wine is not rear as well - so Friday dinner is settled.
Ingredients:
- 1 kg of fresh mussels
- 250 ml white wine (here Piemonte Cortese)
- 1 small onion (better shallot)
- 1 clove garlic
- bunch of parsley
Procedure:
- Wash mussels in very cold salted water. Additionally, you can scrub them with salt - it will be easier to remove dirt.
- Wash mussels again and drain well.
- Cut onion and garlic.
- Pour the wine in the pot, add onion and garlic.
- Add salt and pepper to taste.
- Add mussels, close the lid and set on the high heat.
- Shake the pot periodically, wait until wine gets to boil.
- Cook for 1 more minute, shaking periodically.
- Open the pot, remove mussels.
- Place the opened once in the plates.
- Pour the liquids on top.
- Serve with sprinkled parsley and a glass of white wine.

Note: Do not be afraid to oversalt the sauce, salt generously.
