Simple: mussels in white wine



One of the best things about Italy: you can always find good, fresh and relatively cheap mussels here. Local white wine is not rear as well - so Friday dinner is settled.




Ingredients:

  • 1 kg of fresh mussels 
  • 250 ml white wine (here Piemonte Cortese)
  • 1 small onion (better shallot)
  • 1 clove garlic
  • bunch of parsley 
Procedure:
  1. Wash mussels in very cold salted water. Additionally, you can scrub them with salt - it will be easier to remove dirt.
  2. Wash mussels again and drain well.
  3. Cut onion and garlic.
  4. Pour the wine in the pot, add onion and garlic.
  5. Add salt and pepper to taste.
  6. Add mussels, close the lid and set on the high heat.
  7. Shake the pot periodically, wait until wine gets to boil.
  8. Cook for 1 more minute, shaking periodically.
  9. Open the pot, remove mussels.
  10. Place the opened once in the plates.
  11. Pour the liquids on top.
  12. Serve with sprinkled parsley and a glass of white wine.
Estimated preparation time: 10 minutes
Estimated cooking time: 3 minutes

Note: Do not be afraid to oversalt the sauce, salt generously.
