Muesli bread


I used to make muesli bread, when friends were visiting me for Christmas. Best breakfast ever! Combining the rich taste of various dried fruits, Christmas spices and oats. Baked porridge with goods.You can easily make it gluten free as well. The consistency stays the same.

Do not be afraid to modify fruits inside: banana chips/ dates/ papaya or cherries/ apple chips/ apricots. Or just add whatever left in your cupboard. Originally, the recipe is from Bill Granger, taken from Olga's blog, but I have modify it to my taste.

My best combination is following...


Ingredients:
  • 50 g oats ( ~0,5 cup)
  • 300 g milk
  • 240 g flour (~ 2 cups)
  • 1 tsp baking powder
  • 50 g dried apples
  • 125 g dried cherries
  • 50 g dried apricots
  • 50 g dried plums
  • 3 tbsp walnuts
  • 75 g sugar (better brown, but usual will play as well)
  • 1 tsp grounded cinnamon
  • 3 tbsp honey
  • 1 large egg, lightly beaten 
  • handful hazelnuts for presenting
Procedure:
  1. Preheat the oven for 180 C. Poor the milk over oats and leave it for 30 min.
  2. Grease the traybake with a piece of butter.
  3. In a big bowl mix the following ingredients in order: flour, baking powder, milk with oats, all the dried apples, cherries, apricots, plums, walnuts, cinnamon, sugar, honey, egg. You would need some efforts to steer it, the mixture will be quite hard.
  4. Poor the pastry into the traybake, sprinkle with hazelnuts.
  5. Bake around 1 hour.
Estimated preparation time: 45 min
Estimated cooking time: 1 hour

Notes: butter on top works really well, some people prefer it with cream cheese also.
